Meet Julien & Stephane, two “genius” of French cuisine!
Both have worked in some of the most prestigious restaurants to build their career and have now become true entrepreneurs creating French inspire dishes for the corporate world (see www.jadorecatering.com.au ) and they have also launched a revolutionary baby food concept (see www.bubsdelight.com.au).
Smart Cruiser is proud to have signed an exclusivity contract with them, giving us an edge when it comes to catering on Sydney harbour.

As a French chef Julien learnt the fundamentals in a prestigious French hospitality/cooking school in Paris. He then traveled the world from Europe countries to Asian countries to further develop his classics and turn them onto original and delightful dishes. Along his culinary journey he has developed inspirational dishes through different cultures and has learnt how to mix and balance flavours together.
Julien worked side by side with some of the world’s best chefs, including Dominique Grel, Stephane Vieux, Jean-Michel Guilloteau, Pierre Hermé, Patrice Hardy, and Marc Davis.
With a culinary experience that stretches over almost 20 years, half of which was spent in fine dining and as head chef Julien has used this incredible experience to allow him to become an ambassador of quality food.
Australian-born, Stephane moved to France when he was 16 years old. He straight jumped onto the occasion to develop his natural taste for cooking. Building his path in the French culinary world Stephane had the opportunity to work alongside with famous French chefs and in some of the best fine dining kitchen of the country. As per renowned chefs Pourcel’s brothers, Stephane was head chef for them in their new and successful opened three stars Michelin Restaurant in the South of France (Cannes).
For Stephane cooking begins with choosing fine ingredients then experimenting with flavours, textures and colors, seeking contrast and innovation. He is often described as the true food fanatic.
